How to cook Pork Sinigang sa Batwan
Sinigang na Baboy or Pork Sinigang is the ultimate Filipino comfort food and is now recognized in many countries and featured in the NYTimes magazine and Asian Food Network. This Filipino soup is usually prepared with tamarind, pork, and vegetables. It's appetizing on its own or served with rice. But in this Sinigang recipe, we will use 'batuan' as its "Pampaasim." If you haven't heard of Batuan, it is a fruit and a traditional souring agent widely used in cooking in Negros and Panay island in the Visayas region. Also, after researching Google, I learned that Batuan's scientific name, "Garcinia Binucao," and a relative of the mangosteen; its sour taste is not acidic and has a lot of health benefits. It is very regional and can be found in the Visayas region and some parts of Mindanao. Batuan is used in a variety of Ilonggo dishes — Kansi, KBL, sinigang, paksiw, even the famous Chicken Inasal.

Pork Sinigang sa Batwan Recipe
This Batwan version of Pork Sinigang is more delicious compared to the usual Tamarind version. Ito ang mas Pinasarap na version ng Pork Sinigang
Ingredients
- ยพ kilo Pork chop
- 10 pcs small Batuan
- 2 medium-sized tomato sliced
- 1 big onion sliced
- 4 cloves garlic minced
- 2 pcs egg plant sliced diagionally
- 2 pcs Okra sliced
- 10 pcs of string beans cut to 2 inches
- 1 medium labanos radish, cut diagonally
- 7 cups of water
- 1 bundle kangkong river spinach
- 3 pcs of green chili
- 2 pcs long red chili
- 2 pcs pork broth cubes
- salt and black pepper to taste
Instructions
- Boil pork using 2 cups of water
- Add 1 tablespoon of salt
- This process will eliminate the scum and odor of pork
- Boil for 3 minutes, then remove from the pot and set aside
- In a pot add 2 tablespoon of oil
- Saute garlic and onion
- Continue to saute until onion is translucent
- Add tomato slices and cook for 2 minutes
- Add pork slices
- Add 1 tablespoon of salt and ground black pepper
- Mix well
- Continue to cook until the fat render (about 5 minutes or more)
- Add 5 cups of water then cover
- When it starts to boil add Batuan
- Cover and boil for 5 minutes
- Add radish or labanos
- Cover and cook for 3 minutes
- Time to press the batuan to get more flavor from it
- Add eggplant,string beans then cover and cook for 3 minutes
- Add kangkong stems, okra and 2 pcs pork broth cubes then simmer for 3 minutes
- Mix then taste it if you still need to add salt
- Add salt to taste and add chilis then cook for 1 minute
- Add kangkong leaves
- Cook for another 1 minute
- Serve hot with rice
