- ½ cup Glutinous Rice wash & soaked
- ½ cup Jasmine Rice wash & soaked
- 5 cups Water add 1cup or more if needed
- 2-3 tbsp. Fish Sauce to taste
- 1 tsp. Turmeric Powder for color
Garnish:
- Hard Boiled Eggs
- Fried Garlic
- Spring Onions chopped
- Calamansi (optional)
Instructions
Hard Boiled Eggs:
- Boil Eggs for 8-10 mins., let it cool in an ice water bath.
- Peel off eggshells then slice in half & set aside.
- Heat 4 tbsp. of oil in a pan on a low heat.
Fried Garlic:
- Mince 1 bulb of garlic & fry until golden brown.
- Strain fried garlic from oil & set aside separately.
Arroz Caldo:
- Heat 3 tbsp. of garlic oil in a large pot.
- Sauté sliced ginger & onions until softened.
- Sear chicken drumsticks for 3 mins.
- Season with Black Pepper & Chicken Bouillon Cube.
- Simmer chicken for 8mins. until renders chicken stock.
- Add washed & soaked Glutinous & Jasmine Rice, then sauté for 3 mins.
- Add 5 cups of water, cover & bring to a boil.
- Stir occasionally and simmer for 20 mins. on med. low heat.
- Season with 1tsp. of Turmeric powder & 2tbsp. of fish sauce, to taste.
- Add 1cup water & simmer for another 12-15mins.
- Taste Test, season with Fish Sauce & Black Pepper, adjust according to your preference.
- Serve in a bowl and top with Hard Boiled Egg, Fried Garlic, Spring Onions.
