The fish is usually salted and dried under the sun, which gives it a distinct flavor and texture. Sarciado, on the other hand, means "sautéed with tomato and egg." Sarciadong Daing is often served with steamed rice and sliced fresh tomatoes or cucumber, which helps balance the dish's bold flavors. Some people also like to add a drizzle of vinegar or a squeeze of calamansi (Filipino lime) to cut through the dish's richness.

Ingredients and Procedure of Sarciadong Daing: |
First, soak the Daing dried fish in water for several minutes to soften it and remove some of its saltiness before making Sarciadong Daing. Pan-fry the fish until it's crispy and golden brown on both sides, then set it aside. Next, the tomatoes, onions, and chilies are sautéed in the same pan with some garlic and oil until they become fragrant and slightly caramelized. The fried fish is then added to the pan and mixed with the tomato-onion-chili mixture. Then, at the final stage, they pour beaten eggs over the top and cook them until set, creating a delicious and protein-rich sauce that binds all the flavors together.
