How to cook Chili Mud Crab
This Chili Mud Crab Recipe is a delectable seafood dish that always leaves you craving more. You’ll eat more than your usual serving of rice once you taste it.
The name instantly gives you a clue. Yes, this is a delicious mud crab dish cooked with chili sauce. Originating from Singapore, this recipe will blow your taste buds away—especially if you love all things spicy.
Of course, some would argue that crab meat tastes exactly like lobster meat. Still, I stand by my claim that mud crabs taste much better because they are sweeter. So, although it does take some effort to pluck the meat out of its shell, crabs are still excellent.
Additionally, medical experts agree that crabs have several health benefits. They contain omega-3 fatty acids, DHA and EPA, as well as selenium and zinc. Crabs decrease blood pressure, safeguard against heart disease, and boost the immune system. They’re even ideal for people with diabetes since their chromium helps lower blood glucose levels.

Here are some tips to cook a delicious Spicy Chili Mud Crab Recipe:
Choosing your Crabs:
- Freshness is key: Opt for live mud crabs if possible. Look for crabs with active movement and firm shells.
- Size matters: Choose medium-sized crabs for even cooking.
Preparing the Crabs:
- Clean thoroughly: Rinse the crabs under running water, removing dirt or debris.
- Stunning (optional): Briefly submerge the crabs in ice water to stun them before cleaning.
- Cleaning technique: There are different methods for cleaning crabs. You can find video tutorials online that demonstrate the process.
Cooking the Crabs:
- High heat and sear: Start by searing the crabs in hot oil to lock in their juices and add a nice color.
- Don't overcook: Crabs cook quickly. They're done once the flesh turns opaque and the shells turn reddish-orange.
Building the Spicy Chili Sauce:
- Sauté your aromatics: Start by sautéing aromatics like garlic, ginger, and shallots to release their fragrance.
- Spice it up! For a balanced heat, combine fresh chilies and chili flakes. Adjust the amount according to your spice preference.
- Sweetness and acidity: Balance the spice with sweetness from tomato puree, ketchup, or brown sugar. Add a splash of vinegar or lime juice for acidity.
- Thicken it up: Cornstarch slurry or a small amount of tomato paste can help thicken the sauce for a luxurious coating on the crabs.
Additional Tips:
- Don't be afraid to adjust: Taste the sauce as you go and adjust seasonings like salt, fish sauce, or soy sauce to your liking.
- Serving suggestions: Pair your Spicy Chili Mud Crab with fluffy rice, crusty bread for dipping in the sauce, or steamed vegetables.
- Garnishes: Fresh chopped scallions or cilantro will add color and freshness.
