How to cook Almondigas or Albondigas

Almondigas Recipe  is believe to be originated from the traditional Mexican meatball soup called Albondigas soup. Albondigas means “meatballs” in Spanish.  This Filipino version Almondigas  has 3 main ingredients: meatballs, misua and patola, this is also known as loofah or Chinese Okra.

Try this Misua with Meat Balls and Patola Soup Recipe also known as Almondigas Recipe; it is a nutritious comforting soup, especially on a cool rainy day.  Misua is an egg wheat noodles, commonly added on any kind of sauté vegetable soups.   Patola is also known as Luffa or Sponge Gourd; it contains calcium, iron, and phosphorus and has a good source of vitamin B. This noodle soup is very delicious and takes less than 30 minutes to prepare. The costs of ingredients are cheap and will surely fit your budget. This can be considered as a complete meal itself; you may eat this with rice and fried fish or you may eat this as it is..

Almondigas Ingredients:

Meat Balls:

  • ยฝ kilo Ground Pork or beef
  • 1 cup Cooked Rice
  • 1 pc medium Onion, chopped
  • ยผ cup    All-Purpose Flour
  • 2 pc Eggs, lightly beaten
  • ยพ tsp    Black Pepper
  • 2 teaspoon Iodized Fine Salt

For the Almondigas Soup:

  • 6 cloves Garlic, crushed
  • 1 medium sized patola ( loofah or chinese okra), sliced
  • 1 pc medium Onion, sliced
  • 8 cups Water
  • 1 pc Chicken Bouillon Cube
  • ยผ kg Carrots
  • 150 grams Misua Noodles
  • 2 stalks Green Onion, sliced
  • 1 pouch (200 grams) Tomato Sauce
  • 3 tablespoons fish sauce

Almondigas Cooking Instructions:

For the Meatballs:

  • In large bowl combine ingredients for meatballs.
  • Mix thoroughly until all the ingredients are well incorporated.
  • Form every 2 teaspoons of mixture into balls. Set aside.

For the Soup:

  • Sauté garlic, onion and chicken cube.
  • Add Tomato Sauce and water.
  • Allow to Boil, then add meatballs, carrots, salt and pepper to taste.
  • Cover and Simmer for another 20 minutes, or until meat is cooked.
  • Add the patola (loofa) and cook for 3 minutes.
  • Add misua, then Simmer for 3 minutes.
  • Top with green onions.

    Oh this looks delicious. I never actually knew that this dish had almondigas as its name. I just called it misua with meatballs haha
