Molo Broth:

Instructions
~ Let's Wrap the Molo dumplings ~
Spread wonton wrapper on a clean surface & fill each with 2 tsp of pork mixture.
Roll wrapper to cover the filling & press both ends to secure.
Brush one end with water & press edges together to seal.
Repeat the process until pork mixture are wrapped.
This recipe can make 74-76 pcs.
Store wontons in an airtight container & freeze. This will last for a month.
~ Time to cook the Broth ~
In a large casserole put 7 cups of water & bring it to a full boil.
Boil Chicken Leg or Breast for about 15 mins. or until chicken is cook.
Remove, let it cool down & shred the chicken into strips.
On the same pot, boil shrimp heads & shells for 15mins.
Fire off & strain the broth.
~ Lets cook our Molo Soup ~
Heat 2tbsp Canola Oil in a casserole.
Saute garlic until fragrant.
Add finely chopped Onion and Saute until translucent.
Add shredded Chicken and Saute for 3 mins.
Add chicken cube & 1/2 tsp Black Pepper then mix to season.
Pour in 6cups Unsalted Chicken Broth & bring to a boil.
Remove any scum that floats on top of the broth.
Drop in 40 pieces of pork wontons & bring broth to a simmer.
Stir pork wontons, cover & let it simmer for 10-15 mins.
Add molo wrapper scraps (optional)
Add peeled Shrimp, stir and simmer for 3mins.
Season with fish sauce to taste & spring onions.
Serve immediately while it's piping hot.
When serving garnish it with Spring Onions, Fried Garlic or Chili Garlic Oil
