Mamon with Almonds Recipe

Mamon With Almonds is easy to make with only 4-Ingredientts. We suggest using fresh eggs and good quality Cake Flour, which is the key to a soft and fluffy Mamon. To make it something special, we will top it with almond slivers.

Instructions
~ How to Prepare ~
First let's separate the eggs
Transfer egg whites in a large mixing bowl.
Whip until frothy over high speed
Wradually add sugar until soft peaks form
Combine and lightly beat egg yolks and vanilla extract.
Slowly add egg yolks over low speed
We're going to use a good quality Cake Flour from JOY of BAKING.
Add sifted cake flour in small batches
Cut and fold with a spatula or a balloon whisk
Tips: sift cake flour twice before measuring.
Continue cut and fold until batter is smooth and no lumps
Divide mamon batter equally into 12 molders.
I'm using a 2.5 inches round tin molder and 3oz. liners. (You can use a regular Mamon molder with mamon liners.)
We're going to top it with toasted almond slivers.
~ Time to Bake ~
Bake in a pre heated oven at 160C / 320F for about 23-25 mins.
When you insert toothpick and it comes out clean then it's time to remove from the oven.
