Instructions
Prepare the Meat:
Boil the pork belly and liver in water for 8–10 minutes.
Drain, let them cool, and slice thinly. Set aside.
Make the Broth:
In a saucepan, heat oil over medium heat.
Sauté the white part of the spring onions until golden brown.
Pour in 2 cups of water and bring to a boil.
Add the Batchoy seasoning packets and stir well.
Cook the Noodles:
Boil the noodles in the broth for 2 minutes, then remove immediately and place in a serving bowl.
Prepare the Toppings:
Drop the sliced pork belly, liver, and egg into the boiling broth.
Let it cook for 1 minute, then remove and arrange over the noodles.
Assemble the Batchoy:
Pour the hot broth over the noodles and toppings.
Garnish with crushed chicharon, chopped spring onions, and a sprinkle of black pepper.
Serve & Enjoy:
Serve immediately while hot.
