Brazo de Mercedes Recipe in a Tub

Brazo de Mercedes is a classic Filipino dessert of soft, fluffy meringue and rich custard filling. It's a treat loved by many, and now, it has been reinvented as Brazo de Mercedes in a Tub – a more convenient and accessible way to enjoy this delicious dessert.

Ingredients
  

Meringue:

  • 6 Large Egg Whites
  • ¼ tsp. Cream of Tartar
  • 7 tbsp. Sugar

Custard Filling:

  • 6 Large Egg Yolks
  • 150 ml Condensed Milk
  • 1 tsp. Lemon or Vanilla Extract

You also Need:

  • 2 pcs 9x12 Baking Trays
  • 2 pcs Baking Liners
  • 1 tbsp. Shortening
  • 2 pcs 750ml Plastic Containers

Instructions
 

~ Let's Make our Meringue ~

  • In a grease free bowl, whip egg whites until frothy
  • Add cream of tartar and whip until foamy
  • Gradually add sugar until stiff peak forms
  • I'm using two 9x12x1/2 inch baking trays,
  • Lightly greased and lined with baking paper.
  • Divide the meringue into two baking trays
  • You can also use a single 9x13x1 inches Roll Pan
  • Flatten meringue with a spatula or a dough cutter
  • Make a wave design using a fork
  • Bake in a Pre-heated Oven @ 160C/320F for 25-30 minutes or until golden brown.

~ Let's make our Custard Filling ~

  • In a saucepan, combine egg yolks & condensed milk, then mix until well combined.
  • Turn the flame on a low heat setting and stir the mixture continuously.
  • Let it simmer until custard thickens
  • Fire off, add vanilla extract, and set aside to cool.
  • As it cools down it becomes thicker.

~ Let's Assemble ~

  • Remove the meringue from the tray
  • Trim off burnt edges
  • Slice the meringue with the same size, of your plastic container as possible
  • Put 1st layer of meringue in a plastic container.
  • Top with a scoop of custard filling & spread evenly
  • Top with another layer of meringue
  • Top with another scoop of custard filling and spread evenly
  • Lastly, cover the top with meringue
  • Our Brazo de Mercedes is done is now ready to serve and enjoy!
