Crack the eggs into a bowl, season with a little salt, and beat until well combined.
Heat a small amount of oil in a nonstick pan over low heat. Pour in the beaten eggs and cook in batches until set. Remove from the pan, then cut each egg into rectangles using a musubi mold or a sharp knife. Set aside.
Using the same pan, fry the SPAM slices until lightly browned on both sides. Add the teriyaki sauce and cook for about 1 minute, allowing the SPAM to absorb the sauce. Remove from the pan and set aside.
Mix Rice & Assemble Musubi
Place the freshly cooked Japanese rice in a large bowl. Season it with vinegar, salt, pepper, sugar, and sesame oil. Gently mix until the seasonings are evenly distributed, then fold in the toasted sesame seeds.
Cut each nori sheet into three equal strips lengthwise.
Lay one strip of nori on a clean work surface with the shiny side facing down. Place the musubi mold in the center of the nori.
Fill the mold with a layer of seasoned rice, followed by a slice of egg and a slice of glazed SPAM. You can also arrange the SPAM first, then the egg and rice if you prefer.
Press the layers firmly using the mold cover to help the musubi hold its shape. Carefully lift off the mold.
Wrap the nori snugly around the rice and fillings, sealing the ends to keep everything in place.
Repeat the same steps with the remaining ingredients until all the musubi are assembled.
