Instructions
Prep the Veggies:
Drain the canned sweet corn kernels and set aside.
Peel the cucumber, remove the seeds, and dice it.
Dice the tomatoes and onion.
Cut off the ends of the lettuce, slice into bite-sized pieces, then set everything aside.
Make the Nacho Salad Dressing:
In a bowl, add mayonnaise and pour in the lemon juice.
Stir until smooth and well blended.
Add grated or finely minced garlic.
Season with salt and pepper to taste.
Mix in 1 tablespoon of honey or sugar.
Stir everything together well.
Do a quick taste test and adjust the flavor if needed.
Assemble the Nacho Salad:
In a large mixing bowl, combine all the prepared vegetables.
Drizzle the salad dressing over the veggies.
Toss the salad gently until everything is coated evenly.
Transfer the salad to a serving plate or bowl.
Arrange nacho chips on a separate serving plate or around the salad.
Grate some cheddar cheese and sprinkle it generously on top of the salad.
