How to cook Ukoy na Kalabasa

Ukoy na Kalabasa Recipe is a healthy and delicious Filipino appetizer that is very easy to cook.  My Kids who do not want to eat Kalabasa or squash end up loving this dish, they usually ask their mom to prepare it for afternoon snacks.

The regular Ukoy is always peddled around in the Philippines by street vendors as merienda or snacks. These fritters are made with shrimp and a medley of grated or julienned vegetables, ranging from papaya, bean sprouts, squash, carrots, onions to cassava then deep-fried into crisp patties and served with a spicy vinegar dip.
