How to cook Pork Bistek Tagalog

Bistek Recipe or popularly known as Bistek Tagalog is made of strips of Beef Sirloin slowly cooked in a mixture of soy sauce, calamansi juice, and onions. This popular authentic Filipino dish is very easy simple to prepare and is often found in the menu of every Filipino restaurant.

Bistek is originally with beef because it is the Filipino version of the famous “Beef Steak” but you can substitute pork or fish.  In this recipe we will be using Pork Tenderloin instead of beef and name this dish Pork Bistek.

Pork Bistek Recipe is usually serve with sauce on top and garnish with onion rings.

  • ¾ kilo Pork loin, tapa sliced
  • ½ cup soy sauce
  • 1 tablespoon Worcestershire sauce (optional)
  • 1½ cups water
  • ½ large white onion, peeled and sliced crosswise
  • ½ large white onion, sliced into rings for garnish
  • 10 small sized calamansi, sliced and juiced
  • 1 small sized bell pepper, for garnish
  • 4 cloves garlic, crushed
  • 3 tablespoons cooking oil
  • Salt and pepper to taste
  1. Let's prepare the marinade...
  2. Remove the juice from Calamansi, pour it in a large pan where you will place your marinade
  3. Add the Worcestershire sauce
  4. Add the Soy sauce
  5. Add the Garlic
  6. Add freshly ground black pepper
  7. Mix the marinade and add the Pork slices then refrigerate for at least 2 hours.
  8. Heat the frying pan and pour the Canola Cooking oil.
  9. Saute the onions, once cooked remove from the frying pan and set aside.
  10. On the same frying pan, add canola oil.
  11. Pan-fry both sides of the pork slices for 2 to 3 minutes or until medium brown.
  12. Remove the cooked pork slices and pan-fry the remaining slices.
  13. Pour the soy sauce and calamansi juice marinade into another sauce pan.
  14. Add water.
  15. Add the sauteed onions to the Bistek mixture.
  16. Let it boil.
  17. When it starts boiling, add to the mixture the fried pork slices then mix well.
  18. Simmer for 20 minutes or until the pork becomes tender(add more water if needed).
  19. When the pork is already tender add the bell red pepper and the remaning onions rings.
  20. Cook for 5 more minutes, you can add salt to adjust the taste. You should have some sauce in it when its done.
  21. Garnish with the onion rings.
  22. Transfer to a serving plate and serve with steamed rice.
