La Paz Batchoy Recipe

Philippines has a variety of soups, among which is the La Paz Batchoy that originated in Iloilo. It is a noodle soup garnished with Pork innards, crushed Pork cracklings, vegetables, and topped with cracked raw egg; a truly tempting treat.

Estimated preparation and cooking time: 1 hour and 30 minutes

La Paz Batchoy Ingredients:

  • batchoy.jpg 1 kilo mami noodles
    Broth
  • 1 medium size onion, quartered
  • 1/2 head garlic, crushed
  • 1/2 tsp. shrimp paste (bagoong)
  • 1 tbsp. peppercorns, crushed
  • 2 tbsp. worcestershire sauce
  • 10-12 c. beef/pork stock
  • 1 tbsp. sugar
  • 1 tsp. soy sauce
  • salt to taste

Chicken Sotanghon Soup Recipe

Chicken Sotanghon Soup Recipe, Sotanghon Noodles is the Filipino name for the bean thread noodles also known as cellophane noodles or chinese vermicelli noodles which is made from mung beans. It is thin, like vermicelli, almost transparent, smoother and more slippery than most other noodles. Used not only in soups but also in lumpia (spring rolls) and pancit (chowmein-like dish).

Preparation Time: 20 minutes
Cooking Time: 30 minutes
Servings: 4

Chicken Sotanghon Soup Ingredients:

  • chicken-sotanghon-soup.jpg 200 gm sotanghon (bean thread) noodles
  • 1 cup chopped or flaked cooked chicken meat (you can use left over chicken meat)
  • 6-7 cups chicken stock
  • 2 Tbsp oil
  • 1/2 head of garlic – minced
  • 1/2 medium onion – sliced
  • 1 Tbsp patis (fish sauce)
  • 4 dried Chinese black mushrooms (shiitake)
  • chopped green onions

Almondigas Soup Recipe

Almondigas or bola-bola (meatballs) is a soup with rice vermicelli called misua or miswa, toasted garlic, carrots and pork cracklings (chicharon).

Serves 10

Almondigas Soup Ingredients:

    MEATBALLS:
  • almondigas.jpg 1/2 kg ground pork or chicken
  • 1 cup cooked malagkit rice
  • 1 pc small onion, chopped
  • 2 tbsp all-purpose flour
  • 2 pc eggs, lightly beaten
    SOUP:
  • 4 cloves garlic, crushed
  • 1 pc medium onion, sliced
  • 1 can (140 g) DEL MONTE Original Style Tomato Sauce
  • 6 cups chicken broth or water
  • 1 pc large carrot, cut into cubes
  • 120 g miswa noodles
  • 1 stalk green onion, chopped
  • chicharon

Tom kha gai or Thai Coconut Soup

Tom kha gai or Thai Coconut Soup is a hot sweet soup made with coconut milk, lemon grass and chicken. The name literally translates to boiled galangal chicken. The fried chillies add a smoky flavor as well as texture, color and heat, but not so much that it overwhelms the soup.

There are other versions made with either seafood (tom kha talay) or mushroom (tom kha het) too. All follow a similar recipe.

 

Estimated cooking time: 45 minutes

 

Tom kha gai or Thai Coconut Soup Ingredients:

  • 17 fl oz chicken stock
  • 5 cm of galangal , peeled and chopped, (or ginger)
  • 4 lemongrass stalks , thinly sliced
  • 2 kafir lime leaves
  • 1 large chicken breast , cubed
