Breaded Chicken Fillet Ingredients:

  • 2 tbsp lemon juice
  • 2 eggs
  • salt to taste
  • 2 tbsp all-purpose flour
  • 1/2 cup dry breadcrumbs

  • green peas, buttered

Indian Spice Box Chicken Recipe, Serve this exquisitely flavoured chicken dish with mounds of fluffy rice.

Preparation and Cooking time: 30 minutes

Indian Spice Box Chicken Ingredients:

  • 3 large garlic cloves
  • 5cm piece of fresh root ginger
  • a bunch of fresh coriander
  • 200g carton of full-fat Greek yogurt
  • 2 medium onions
  • 8 medium bone-in chicken thighs (total weight about 800g-1kg/1lb 12oz-2lb 4oz)
  • 2 tbsp groundnut or corn oil
  • 2 tsp fennel seeds
  • 1 tsp cumin seeds
  • a good knob of butter
  • Chilli-ginger garnish , to serve

Chicken Sotanghon Soup Recipe, Sotanghon Noodles is the Filipino name for the bean thread noodles also known as cellophane noodles or chinese vermicelli noodles which is made from mung beans. It is thin, like vermicelli, almost transparent, smoother and more slippery than most other noodles. Used not only in soups but also in lumpia (spring rolls) and pancit (chowmein-like dish).

Preparation Time: 20 minutes
Cooking Time: 30 minutes
Servings: 4

Chicken Sotanghon Soup Ingredients:

  • chicken-sotanghon-soup.jpg 200 gm sotanghon (bean thread) noodles
  • 1 cup chopped or flaked cooked chicken meat (you can use left over chicken meat)
  • 6-7 cups chicken stock
  • 2 Tbsp oil
  • 1/2 head of garlic – minced
  • 1/2 medium onion – sliced
  • 1 Tbsp patis (fish sauce)
  • 4 dried Chinese black mushrooms (shiitake)
  • chopped green onions
